Eat Them Up Yum

I’ve taken the extra time (haha) I’ve had this summer to try a few new recipes.  I thought I would share what have been hits around here.

The black bean burgers we usually make don’t hold up on the grill too well, so I found this recipe that promised a burger that would be easy to grill.  These Greek-Style Lentil Burgers were a big hit with the kids.  Liam said they tasted like a big falafel.  I thought they were very flavorful as well.  And the held up on the grill like a charm.  The burgers were really easy to make and the best part is they can be made days before you’re ready to cook them since they freeze so well.

Next up is a meal I made for the first time tonight.  I thought it was time to add more casserole type dishes to our menu, so I tried Baked Ziti with Zucchini, Chick Peas and Olives.  It was really easy to put together and baked for only 25 minutes.  A full cup serving is only 299 calories.  This meal would pair well with a Greek style salad.

Finally, the kids made (I helped only a little) these awesome Chewy Granola Bars.  I usually buy granola bars, but I was getting fed up with the price and the amount of sugar even in the “healthy” brand bars.  This recipe makes 25 bars and is much more filling than store bought bars.  The kids LOVED them and they would be a great addition to the lunch boxes this year.  We didn’t have almond butter or maple syrup on hand, so we substituted with peanut butter and honey which seemed to work well.
